8 Vegan Cookbooks you can’t miss out on!

Vegan Mango Cashew Yogurt, the perfect option for a healthy summer breakfast. This recipe is 100% plant-based, delicious and very easy to make.

There has been a whopping increase in the interest in vegan products and vegan content in the past few years. As such, there is now a greater offer than ever before! This applies to foods, restaurants, apparel... and, of course, it applies to cookbooks as well! We are also very thankful to have published our own vegan cookbook in April 2017 (so far, it’s been published in Portuguese only, but we’re hoping that a publishing deal will come along that will allow us to reach a greater audience). We collect vegan cookbooks (who would guess!) not only because we love to gather inspiration from amazing, talented authors but mostly because we love good food. And trust us, there’s plenty of that in these eight cookbooks we’ve listed in this blog post. This is a selection of a few of the books we own (we have loads) and there’s so many more that we haven’t even had the chance to flicker through. Let us know in the comments below what your favourite cookbooks are, vegan or not!

  1. Vegan Richa’s Indian Kitchen, by Richa Hingle

If you enjoy authentic Indian food and you’re looking for great plant-based recipes, look no further than Vegan Richa’s first book! This could be considered the bible of vegan Indian classics and the recipes are super simple to follow. Many have long lists of spices included in the required ingredients... but if you’re anything like us, you already have those on your pantry anyway, waiting for the right moment to shine! Our favourites from this book are the Palak Tofu (Tofu in Spinach Sauce) and the Tofu Pasanda (Tofu in Velvety Pepita Poppy Seed Sauce). The fact that these are two tofu-based recipes is a sheer coincidence, and there are plenty of pulses and vegetable-based recipes to choose from.

  2. Cook Share Eat Vegan, by Áine Carlin

Áine Carlin’s cookbook is not only filled with delicious recipes, but it it absolutely beautiful to look at as well. You can tell a lot of thought went into the photography and design and that is so important for us, as it is also what we do for a living. It is an excellent resource for stunning dishes you can use to impress your friends and family over gatherings and festive dinners. Our favourites are the Falafel Shakshuka and the Panna Cotta Three Ways.

  3. The Plant-Based Cookbook, by Deliciously Ella

Ella Mill is the author of the popular blog Deliciously Ella and her fourth cookbook was the fastest selling vegan cookbook of all time. Naturally, we couldn’t NOT have it. This is an absolute must-have for everyone who loves homecooked food and family friendly recipes that are easy to prepare with your everyday pantry. There’s a little bit of everything and it is impeccably organized. The Five Bean Chili with Cornbread and the Breakfast Banana Loaf are our recommendations.

  4. Bosh!, by Henry Firth e Ian Theasby

The Bosh duo are an internet sensation and their debut cookbook is proof that vegan food is appropriate and delicious no matter the occasion. Bosh! includes breakfast recipes, soups, one pot dishes and tray roasts, mexican foods and even sushi! Our favourites, you may ask? The Creamy Mac & Greens and the Ultimate Chocolate Fudge Cake.

  5. Vegan Comfort Classics, by Lauren Toyota

This is the book that will help you nurture that hunger for decadent, rich foods. Doughnuts, cakes, fritters, sandwiches, wraps… The recipes are very easy to prepare and you’ll realize there really is no need to include animal-based ingredients in whatever it is you cook. No one – and we dare say NO ONE – would guess some of these recipes do not include eggs, milk or butter. The recipes that truly blew our minds are the Baked Blueberry Cheesecake and the Fillet-o-Tempeh Sandwich.

  6. Semear o Futuro, by Ivone e Joep Ingen HousZ

This book is particularly special for us because its authors are family – the kind of family you choose, not the one you’re born into – and because we were the ones who suggested they would write this book in the first place. We worked on the photography and design and helped them create this little masterpiece (if we may say so ourselves)! It includes a section about the story of Quinta das Águias, an animal sanctuary in the north of Portugal, and over 60 recipes that are TO DIE FOR. Trust us, we tried them all. It is tough to pick just two recipes to feature here, but… we’ll go for the Mixed Berries Muffins and the Bean Wellington.

  7. The Uncook Book, by Tanya Maher

We’re not particularly fans of raw food, but when you’re presented with GOOD food then there really is nothing else to say other than… YUM. Tanya Maher’s recipes are absolutely show-stopping, the kind that can change the mind of stubborn sceptics! This is a good cookbook to gather inspiration for dinners, brunches and gatherings (we’ve done it a number of times) and there are two recipes in particular that have become a part of our regular meal plans: the Aubergine Bacon and the Nut-Free Bliss Balls.

  8. Vegan 100, by Gaz Oakly (Avantgarde Vegan)

Avantgarde Vegan burst into the vegan scene on Instagram and YouTube and was an instant hit. Since then, he has published two books, and this is his debut piece. The Vegan 100 is a cookbook of moderately difficult recipes to recreate (like seitan and other things such as that), the kind you would save for a special occasion or for a weekend project. However, we couldn't help but mention it, because food like this... is genius! Our favourites are the Dauphinoise Potatoes and the Beetroot Risotto with Candied Walnuts & Beetroot Crisps.
