FROZEN GREEN CUBES FOR SMOOTHIES

Hello peeps! Rita here. We know this recipe may not sound as exciting as the ones we've previously posted, like this granola or the vegan "cheesecake". But it's a great kitchen basic we make sure we never run out of. Why? Because these little dark green cubes help us put together our go-to breakfast: big green smoothies. Green smoothies are quick to make, very filling, healthy and nutritious and they're easy to take with you if you're in a hurry. We like to pack our morning smoothies with as much green goodness as possible. However, it is such a turn-off when we are set on making our smoothies for breakfast and open our fridge to realize... There are not enough dark leafy greens. Or worse, they've wilted, they feel yucky and smell kind of fishy. I bet we're not the only ones this has happened to. And it happened time and time again until we finally realized there was something we could do about it.

A great way of making sure we always have our daily dose of green on hand is buying a buttload of mixed greens (kale, spinach, chard, beet greens, mint, etc), blending them together with a little lime juice and coconut water and freezing them in ice cube moulds. These frozen green babies are ready to go from the freezer into the blender and they keep your smoothie nice and cool! All of these greens are already more than enough to make sure you get a big boost of nutrients early in the morning, but we've even added a couple of spoonfuls of chlorella to the mix. This single-cell green algae is packed with several vitamins and minerals and is mostly known for having the greatest concentration of chlorophyll in the world. It comes with a bunch of health benefits because it helps detoxify and alkalify our bloods. Apart from this chlorella bonus, we've kept this recipe pretty simple. But you can add whatever you'd like having in your smoothie to this recipe, whether it is a couple of knobs of fresh ginger or even a few spoonfuls of other superfoods you have on hand, such as hemp seeds, spirulina and wheatgrass.

I am actually a morning person and take great pleasure in waking up early and seizing every little moment of the day, but André is not (believe me, I've learnt it the hard way) and every extra minute he gets to stay in bed is gold. If you like to sleep until the absolute last minute and really enjoy a nice green smoothie for breakfast, these are perfect for you! Having these frozen green cubes hanging in the freezer will help you go through your morning routines a lot faster and save some of your precious time while you're at it.

Yields 15 cubes (approx. 2 cups)

Ingredients
  • 10 kale leaves
  • 2–3 handfuls of spinach
  • 40 mint leaves
  • 250 ml coconut water
  • juice of 2 limes
  • 2 tbsp chlorella powder

(you can add more greens and superfoods, depending on what you like most and how much you can fit in your food processor/blender)

Instructions

Start by washing your greens, gathering and preparing all of the ingredients. This will improve your dynamic in the kitchen.

  1. Add all of the ingredients to your food processor and blend until it has a smoothie-like consistency.
  2. Pour the mixture over an ice cube mould and carefully place in the freezer. As soon as they freeze they are ready to go in your smoothies!

Thank you so much for this recipe! I'm just starting to explore the idea of a really healthy smoothie with tons of nutrition and this was such a great way to start! I had to get real with myself and admit I am NOT going to make a healthy smoothie on a busy morning. Unless I have these to jump start it! Thanks again. How many cubes would you use per smoothie? I usually like 1c of greens in my smoothie. Thanks!

Hi Meredith! The equivalent to 1c of greens would be about 3-4 cubes, which is what we use. :) Thanks for stopping by! xo

Hi Lisa! Provided that they are stored in an airtight container or ziplock bag in the freezer, these have lasted us several weeks! Just make sure they're tightly packed so they won't become icy and absorb other flavours that might be lurking around. :) xo
