QUICK MANGO CHIA JAM

Our formula for a quick and sugar free Chia Jam works with many fruits. This mango version is spiked with lime juice and zest for an extra boost of flavour.

Hello everyone! It's Rita here. Today we're sharing a very easy jam recipe that not only is absolutely delicious, but can be adapted to all personal tastes. Summer doesn't seem to want to show up any time soon, but our appetites are a changing and we're craving fresh, tropical flavours. Our breakfasts are slowly changing from oatmeals and porridges to cooler, lighter alternatives such as smoothies and yoghurts. And a fruit jam is the best way to boost your yoghurt or toast onto the next level! As you may very well know, storebought jams are packed with processed sugars and we've been looking for a healthier substitute. Chia seeds will turn any fruit pulp into a jam-like mixture and will also help maintain a healthy digestive system. You can make fruit chia jam with all sorts of different fruits, as long as they don't oxidise too quickly (such as bananas and apples). And you can easily add some extra flavour and play around with fun combinations! We paired the mango pulp with some lime zest for this version, but you could also try making a pineapple chia jam with some fresh grated ginger or a strawberry chia jam with a pinch of cinnamon. There is a world of possibilities and I'm willing to bet they will all turn out delicious!

There is one obvious downfall to these jams: they must be consumed fairly quickly because there are no added sugar preserving them whatsoever. This is why we suggest making small doses at a time, in order to avoid wasting any precious fruit. This recipe is perfect for group meals such as a brunch at home with friends or for your own breakfasts during the weekend. Just make one batch of this Mango Chia Jam on friday night and enjoy it as you wish on saturday and sunday. Makes approximately 1 cup of jam

Ingredients
  • pulp of 1 peeled ripe mango (about 500 ml)
  • juice of ½ lime
  • 2 tbsp chia seeds
  • zest of 1 lime
Instructions

Start by gathering, preparing and measuring all of the ingredients. This will improve your dynamic in the kitchen.

  1. Combine the mango and lime juice in a high speed blender and blend until they turn into creamy pulpy mixture.
  2. Transfer this mixture into a mason jar and add the chia seeds and lime zest. Mix well to combine.
  3. Seal the jr and place it in the fridge for 10 minutes before serving. The chia seeds will thicken the mixture and turn it into a jam.
  4. Store the jam in the fridge in an airtight mason jar or container and enjoy within 2 to 3 days.
