LEMON & BLUEBERRY SCONES

These gluten-free scones require only 20 minutes of your time and they turn out absolutely delicious! Perfect for a late afternoon snack.

Hey guys! It's Rita here. Today we're bringing you a very simple and quick recipe, that has actually not been created by us. It's an original recipe by Samantha McMurray, who's created a whole collection of recipes for Jumbo's Vida Saudável program (translates to Healthy Life). Recently, we were challenged by Jumbo to start using their app, which they've named after the program, and to visit one of their supermarkets and explore the products which they label as being the healthiest. Actually, we've been regular shoppers at Jumbo because it's right outside our house and also because they stock pretty much everything we consume on a regular basis. But we'd never noticed that they've identified dozens (or hundreds!) of products with the blue seal they created purposefully for the Vida Saudável program. It's not that the seal isn't properly displayed... It's just that we're often so caught up in our chores, we bypass a lot of valuable information (cue: be more present in the moment!). This time around and thanks to their invitation, we got to spend some time exploring their shelves and look for the healthiest products available. The bonus is, whenever we found these products, we'd find a recipe as well! They've mined the supermarket with a bunch of healthy recipes, most of which are also vegan, and you can access them directly by pointing your smartphone camera at the QR codes. In a matter of seconds, you get both the recipes and the list of ingredients you need to shop for.

And they're doing much more than just identifying healthy products on their shelves and sharing recipes. We've also been invited to give their new app Vida Saudável a go, where we could find a heap of other resources. We set up our profiles and wrote down our infos, like our height, weight and diet – vegan – and answered a few questions regarding our physical and mental state. Through this app, we now get to monitor our consumer habits (given that we register our supermarket runs with their loyalty card) and scroll through recipes, programs, articles and tips on how to upkeep a healthy lifestyle. The app also allows you to specify your food allergies. For us, this works wonders in singling out the products that ingredients sourced from animals. But the single best thing about this challenge we received? Getting to find so many healthy vegan recipes that are available in the app and throughout the supermarket shelves.

Makes 8 scones

Ingredients
  • 250 g oat flour (certified gluten free)
  • 1 tbsp baking powder
  • zest of 1 lemon
  • 1 tbsp lemon juice
  • 1 tbsp coconut oil
  • 40 g coconut sugar
  • 160 ml almond milk (or any other plant-based milk)
  • a handful of blueberries
Instructions

Start by gathering, preparing and measuring all of the ingredients. This will improve your dynamic in the kitchen.

  1. Pre-heat the oven to 200°C (395ºF).
  2. In a large mixing bowl, combine the flour, baking powder, coconut sugar and lemon zest and mix well.
  3. Add the almond milk, coconut oil and lemon juice and mix until everything is fully incorporated and you get a thick dough.
  4. Transfer onto a lightly floured surface and knead the dough a couple of times.
  5. Shape the dough into flat circle and cut the circle into 8 even slices.
  6. Gently press the blueberries in the dough, a few per slice.
  7. Place the slices on a baking tray lined with parchment paper and place the tray in the over.
  8. Bake for 15 minutes or until golden brown.
